Orange Butter Cupcakes

I don't bake very well, but I still post about it in my blog for my own record. I have always loved orange butter cake, orange butter cookies, orange chocolates, anything with orange. I bought some very cute paper cupcakes the other day and I am using it for my orange butter cupcakes, what else?

This recipe is pretty simple and layman. I followed the recipe from here and of course I did not use a round cake tin to bake it but my own cute polka-dot paper cupcakes. You can omit the orange grind and orange juice, and it still makes a perfect fragrant butter cake, yummehh!

Here goes my standard procedure. Wait, standard procedure? Sounds like the rules and steps to follow in the workplace. You may refer the recipe for exact measurement.

Prepare all the ingredients needed ~ Self rising flour, milk powder, baking powder, butter, eggs, sugar, orange juice and orange grind. It's so simple, oh gawd, anyone can make this. Really, if I can make this, anyone else can.

Beat everything together and pour into the paper cupcakes. Bake in a (pre-heated) oven at 180 degrees.

Confession: I did not use a mixer. I just whisk everything in a bowl using my hand. If I had used a mixer, I believe the texture will be more light and fluffy.

Halfway through baking, sprinkle some colored rice on top of the cupcakes. You may omit this if you are a health freak and is concerned on the coloring and all.

Continue baking for about 20 minutes or insert a toothpick and it comes out clean.

My cupcakes are not pretty I know (but thanks to the coloured rice, it makes the cupcakes look cuter). They don't rise and "crack a bit" in the middle like some most cupcakes/muffins always look like.

No extra points given if you can guess who is the first person to try it. No, not the hubs. It's my fussy eater, Kenzie boy. He ate half of the cupcake, considered not bad already.

I made 10 cupcakes, brought 5 to work the next day to let a couple of close colleagues to try and they were finished in a jiffy! That made my day!

    1. Wah, this comment, being the first, really made my day!
It looked like a success, but taste wise, so-so only, not fluffy enuff, coz I didn't use the mixer.
Wah, if resign and open shop sell these, I think can "chap lap" very soon, kekekeke..

  2. The profits from Cup Cakes are so high when we all know the cost is so low. Those shops are making lots of money until everyone has started baking. I used to bake cup cakes of all flavours with fillings every week when I was a student in US. I shared apartment with a Malaysian, Japanese, Korean and had American neighbours too. I would pack the cup cakes in paper bags with their names and left it on Kitchen table for them to bring to universities on Monday morning. They loved my cup cakes but they call it Muffins in USA whether big or small sized. I dunno if I can bake again that again. Too malas and need to find guinea pigs to eat them.

    1. Hmm, good idea, but I don't bake in large numbers.. Usually, when I see something I like from "Mr. G", I will keep dividing the measurement until it reaches the measurement for 1 or 2 persons.. Like if that recipe uses a whole block of 250g butter and 4 eggs, I will divide until it reaches 1 egg and 62.5g butter..

    3. so what does that eating-only-half mean?? 4. You like the scent of oranges too? Wah, then we memang ngam-key.. I like the scent of oranges and lemons.. When you cut them into half, wah, that citrus smell !! Tell you 1 tip (you might already know).. After you squeezed the juices from those lemons (or oranges), don't throw them first.. Keep it to scrub your sink or plates, they smell heavenly !!

Errr, I thought most cupcakes (or muffins) crack a bit in the middle, and it is "supposed" to look like that, no? You know, when you go buy blueberry muffins, in the middle, they crack a bit, yes? Then the blueberry filling kinda flow out a bit, then sekali pandang and you know it's blueberry filling inside..

Wah, courier to readers? Kam tai tak hei ngor ahh? Ok, the next time, if my cakes turn out better than this time, then I consider lah your suggestion, keke.. Not nice also you must telan all I tell you..

Eating half from him means very good liao lor.. He's a picky and fussy eater rite.. So if he eats half better than no eat lor, kan?

    2. Eh, your hubs same as mine.. To be honest, I bake coz I wana use up my flour and etc in the fridge.. Hubs doesn't really eat cakes or cookies.. After I bake hor, he only eats a bite or a piece.. Potong stim really...

Same as you, if me alone eat pulak no fun.. Kenzie boy too young (and fussy) to even eat 1 or 2 by himself.. Then that day, I said give some to neighbours.. Hubby said if eat sendiri ok lagi, if give people, belum cukup standard wor !! Hmmph, he said like that, I want cucuk his eyes liao !!

So end up, last last, pack to work to give guinea pigs.. Most of the time, they will support and finish all :)
