Testing... Thinking...

I've had enough pineapple tarts and ngaku chips. Today I want to talk about (no bake) cheesecake, and this time, I plan to use condensed milk instead of my usual whipping cream+sugar (to save cost), so I want to test it first to make sure it's good.

So, last week, I tested by cutting a small chunk of my Philadelphia cream cheese, just enough to put into two cupcake papercups, and let it rest to room temperature. Then I put one whole Oreo (instead of crushed Marie and melted butter) as the base.

Then I mixed some condensed milk (agak-agak) with my 'test' cream cheese chunk.

I added orange juice because I don't have any lemons in the fridge.

Done. Poured into the cupcake liners. No gelatin, none in the pantry.

Topped with candies, or crushed Oreo, whatever.

Setting in the fridge.

The result? Hubby says nice, but I personally prefer the whipping cream+sugar+gelatin+lemon juice recipe. Thinking, thinking, thinking...

  1. Morning, Louiz! Your cupcake cheesecake looks cute lah. I have tried the condensed milk+cream cheese but I don't really like it. Maybe it is because I am not a fan of condensed milk. But boleh tahan lah if you don't mind condensed milk. It gives a nice pudding texture. Like you, I prefer adding whipping cream as I feel that is the best combination. So the cupcakes only for you and hubby? Kz and G got eat or not?

  2. oh so you are testing with those no-bake cheesecake?? hmmm, those are nice too but then you just scoop some abs mixed with orange juice and condensed milk?? I thought at least need to beat the cream cheese before you let it set?? hahaha.. like that it's like eating cream cheese and not cheesecake lor..

but I salute your spirit of experimenting lah.. many stuffs came from experiment in the kitchen ga mah.. who knows you made something that impressed the world?? like cheese itself, who the hell will ever thought of keeping the milk fermented can give you cheese, and the more matured and more "mold" actually cost you more money??!!

at least your hubby said it was good woh, but I wonder if he really mean it or he just courteously commented?? gotta see if he finished the whole thing, or even ask for more woh, which is something you did not mention at all, hahaha!!

suddenly leh, you remind me of RealGunners the lazy man in the kitchen.. ever so adventurous, so experimenting, and so bold.. well I actually think yours is not cheesecake but probably cream cheese infused with orange juice topped with chocolate chips served in paper cups?? hihihi.. you did not let your two boys tried those meh since they love cheese so much..

so, will you do this again I wonder?? maybe whip up a little before allowing it to set in the fridge?? :p

    1. The remaining Philly cream cheese hor, I used it to spread onto bread, then lightly fry it in the pan, like grilled cheese bread, sedap to the max !! But it's very fattening one la, don't eat too much..

Got la, I used the fork and whisk the cream cheese before mixing orange juice and condensed milk la.. The Philly cream cheese let it set to room temperature, becomes very soft liao geh..

I think hubby give face and say nice only kua, but he walloped everything in 3 seconds wor.. So is it true or fake ahh?

Yep, would definitely do this again, but will be using back my Marie biscuits+butter as base, and then Philly cream cheese+whipping cream+sugar method :)

  6. Hi Louiz,

Great thinking and testing!!! Like suituapui said, I wonder how the cross section will look. Is the cream cheese layer firm or runny?

    Just curious...

    1. I didn't use gelatin, so it's a bit soft, BUT still sets after 5-6 hours.. However, I prefer to use gelatin the next time :)

    2. I think it must be the cream cheese that is firming the mixture. It must be fun experimenting! You know that I love to "play" with my baking and cooking too :p
